Gluten, Grain, Nut, Dairy, Yeast, Sugar FREE Date Muffins Recipe!

Try this gluten, grain, dairy, nuts, yeast and completely sugar free date muffin recipe – courtesy of the lovely Tania Hubbard from the Gluten Free Grain Free Co.! I caught up with her through the week at her Toowoomba workshop; a night of laughter, love, sharing and joy!

These muffins, aside from being incredibly ‘digestive friendly’, are sweet, moist and more-ish…. they really are delicious!
Best bit is that you can make this mixture into 12 muffins or a decent sized cake! A great idea when you’re stuck for a special occasion, or allergy free children’s school treat.
I made the mixture for the first time as written and then I’ve tweaked and changed it here and there for my own take, however the original version from Tania is below.
Date Muffins
Gluten, grain, nut, dairy, yeast and sugar free!
Ingredients
1 1/2 cups dried dates
6 eggs
3 tbs coconut or olive oil
1 medium ripe banana
2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup coconut flour
1 tsp bicarb soda (aluminium free)
1/2 cup water
pinch of salt
Method
Heat oven to 180 C
Line a spring form cake tray with non-stick baking paper or use muffin/cupcake papers in a cupcake baking tray.
Put dates and coconut flour into a food processor and process until dates start to break down.
Add banana, spices, bicarb soda and salt. Combine well
Add water, eggs and oil and blend until well combined.
Either put mix into the lined spring form cake tray or spoon mix (3/4 full) into muffin/cupcake papers in trays.
Bake cake for 35-40 minutes or cupcakes for 20 minutes until they spring back when lightly pressed in the middle and browned. Or use a toothpick to check the cake is cooked through.
