Naturally Sweetened Energy Slice Recipe

REAL FOODIE FRIDAY

I’ve always liked the convenience of a muesli bar, especially for a snack on the run or in the kids lunchboxes, but I don’t like the gunk in the processed packaged versions that have numerous hidden nasties used to hold them together and taste “better”!

The kids have really taken to my home made versions so we now like to use the following base recipe and simply change it up according to what nuts and seeds we have on hand. This is a healthy version that’s naturally sweetened, nutrient dense and has a lot more sustainable energy for the children to use, without spiking their blood sugar levels or feeding their cravings.

I wanted my slice to be sweetish, satisfying, but full of REAL FOOD flavours and textures to appease the tastebuds, tummy and hunger.

So here are TWO versions of this Energy Slice!

The first is the original version, the second a slightly festive version in honour of Christmas approaching 🙂

You can make them into bars or bite size – completely up to you.

The kids love both versions for their school lunch boxes after school snacks, but also for a satisfying breakfast with organic yoghurt. Personally I like them for a snack in the bag and especially, road trips!

   Energy Slice Recipe

Energy Slice – small mix

  • 2 cups rolled oats (I like Gloriously Free Uncontaminated oats)
  • 1 Tablespoon dried cranberries
  • 2 teaspoons goji berries
  • 1 teaspoon chia seeds
  • 2 teaspoons dark chocolate bits (optional or can substitute for cacao nibs)
  • 1 teaspoon cinnamon
  • 1 Tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 Tablespoon raw honey OR rice malt syrup

Method:

  1. In the small bowl of a food processor, roughly pulse the oats to break them down a little and then add cranberries, goji berries, chia seeds, choc bits and cinnamon. Pulse until combined.
  2. Add softened coconut oil, vanilla and honey, then process until the mixture is well combined and sticking together.
  3. Place into a sandwich size square container lined with cling wrap (a brownie tin also works great) and press down evenly.
  4. Refrigerate for at least a half hour before lifting out and cutting into desired pieces.

Xmas Energy Slice – large mix

  • 3 cups oats
  • 1/2 cup dried cranberries
  • 1/2 cup goji berries
  • 1 Tb chia seeds
  • 4 Tb choc bits (optional or can substitute for cacao nibs)
  • 2 Tb pepita seeds
  • 2 Tb flaxseed meal
  • 1 Tb cinnamon
  • 1 tsp ground ginger
  • 3 Tb coconut oil
  • 2 tsp vanilla extract
  • 1/2 cup raw honey or rice malt syrup
  • 5 pitted medjool dates (softened in warm/hot water for 5mins)
  • Good pinch of pink Himalayan salt or sea salt

Method:

  1. In the large bowl of a food processor, pulse together the oats, cranberries, goji berries, chia seeds, choc bits, pepita seeds, flaxseed, cinnamon, ginger and salt until combined. Depends on how “bulky” you’d like your slice.
  2. Add softened coconut oil, vanilla, honey and medjool dates then process until the mixture is well combined and sticking together.
  3. Place into a large rectangular container, lined with cling wrap and press down evenly. (A standard size frittata tray works perfectly, but it depends on how thick you would like your slice in comparison to your mixture amount).
  4. Refrigerate for at least a half hour before lifting out and cutting into desired pieces.

Note: Can drizzle melted raw chocolate over the top for a little razzle dazzle christmas decoration prior to setting in the fridge! 🙂
