So here’s my UPDATED Basic Raw Dark Chocolate recipe just for YOU, which I shared with my last round of students in last weekend’s popular Easy Chocolate Delights Workshops!

Basic Raw Dark Chocolate recipe

Ingredients:

• 250g Raw Cacao Butter

• 130g Raw Cacao powder

• 110g Coconut Sugar (or sweetener of choice – there’s a list below!)

(Raw Honey is far sweeter than powdered sugars, so start with 90g and adjust. You can absolutely mix to your taste and preference!)

Optional:

• Pinch of Pink Himalayan Salt, 1 Tsp Cinnamon, 1 Tsp Vanilla Extract (not essence)

TIP: If using granulated sweeteners, best to powder them down in a grinder before adding. If using liquid sweetener, wait a little until the chocolate mixture has cooled before adding, to avoid it ceasing up like fudge. Always add powdered sugars at the beginning, and any liquid sweeteners towards to the end.

Raw cacao display

Method:

Slowly melt cacao butter, cacao powder and any powdered sugars in a double boiler system or bain-marie on low heat (under 43 degrees). Combine through with a wooden spoon or spatula when the mixture is at least 50% melted.

Mixture may be removed from the heat at this time and blended with a high speed blender for 30 – 60 seconds, especially if using powdered sweeteners. Do not overheat!

If not using a blender, remove from heat when the mixture is melted and continue stirring through.

Add in any liquid sweetener (and salt, cinnamon, vanilla if using) and continue to stir through with a wooden spoon.

Adjust sweetness according to preference, remembering that flavours are intensified when the chocolate is warm, therefore ensure your sweetness is slightly more than you anticipate for room temperature eating!

Cool and aerate chocolate down in temperature (approximately 31-32 degrees) to stabilise the delicate crystals (called tempering).

Add in any flavours, aromas and textures, then pour into moulds or trays.

Allow to set in the fridge (or freezer if you can’t wait!).

Add ins:

There are many delicious nutrient dense foods (nuts, seeds, berries, powders and teas) and aromas (essential oils, flower essences) that you can add in at any time to truly customise your chocolate experience.

Experiment and enjoy!

Can be kept in or out of the fridge – cacao is always enjoyed best warm or at room temperature to experience the flavours as it melts in your mouth!
