Easy Healthy Beetroot Dip

Beets for your Health!

You all know I love making my own dips at home, especially hummus! Yum!

Here’s an easy, delicious and nutritious little beetroot number to brighten your senses and boost your immune system.

Grown in the ground, beetroot has a sweet, earthy and tender taste and is related to turnips, swedes and sugar beet. It’s delicious in salads – hot or cold – to ramp up the colour, variety and nutritional content. You can even use the leaves!

Beetroot contains potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre. It’s known to help lower blood pressure and assist heart disease.

Beetroot contains high concentrations of nitrates, which are converted into nitrites by bacteria in the mouth. Nitrites help open blood vessels in the body, increasing blood flow and oxygen to places lacking in oxygen.

Even though beetroot can be an acquired taste, when you include it into your daily food intake in a variety of ways, you’ll soon adjust your tastebuds and reap the benefits.

Quick and very tasty Beetroot Dip!

Beetroot Dip

Start with 2 or 3 medium steamed or roasted beetroot (yes… you can use a tin if that’s all you have but once you taste fresh beetroot you may never go back!)

Add to taste each of the following ingredients (I’ve given a rough estimate of what I use in brackets!):

  • rocket (handful)
  • tahini (2tbsp)
  • coriander (handful)
  • ACV (1-2tbsp)
  • pink Himalayan or sea salt (good pinch)
  • cracked pepper (to taste)
  • lemon juice (up to a half)
  • extra virgin olive oil (4-5tbsp)

Process or blend until smooth and creamy!

RESULT?

A nice zesty dip or spread on seed loaf, sourdough, crackers, cheese and boiled eggs!
