Creamy Berry Pops – Dairy Free

It’s summertime. Hot, hot, hot.

Of course the children, and adults alike, would love a nice ice cold treat that’s sweet, creamy and delicious.

Well I’m all up for giving my family that, but I don’t like the unnecessary added sugars, artificial colours and preservatives that make up the store bought coloured icy poles.

I’m really not a fan of frozen yoghurt or ice-cream, simply because of the ingredients and how it makes my stomach queasy.

I’ve been blending up frozen berries for quite some time now on a hot afternoon and the children love this simple little treat.

To make this treat a little more special and with a similar taste of store bought ice-creams and sorbets, I decided to buy some moulds and create my own version of a berry sorbet with a balance of creaminess.

I found these moulds from my local Reject Shop last week for $5. Which are a great size and work well.

If you don’t have moulds use ice cubes, and simply pop them out into a blender to re-cream/blend before serving in a bowl, cone or however you like!

This recipe is one I just made and put into the freezer, which the kids taste-tested prior and gave the thumbs up for. Perfect for a hot Australia Day!

The sweetness of the maple syrup balances the tart of the berries, but of course you don’t have to use it if you prefer not to. Just as you can choose to use any of your favourite berries or frozen fruit.

As an added bonus, try blending in some spinach or kale to add in some sneaky greens – the kids will never know!

You can use coconut water, milk or cream as your liquid base. Just have a play and see what you come up with that’s a winner for you, your taste-buds, and your family.

 

Creamy Berry Pops

Berry Pops (2)

DF/GF Refined Sugar Free

Makes 4-5 icy pops, depending on your mould size. And would probably fill two full trays and then some if using ice cube trays.

Ingredients:

  • 1.5 cups coconut cream
  • 1 cup frozen raspberries
  • 1 cup frozen blueberries
  • 1 teaspoon cinnamon
  • 2 tablespoons pure B grade maple syrup (adjust to taste)

Method:

Blend on high until creamy.

Pour into moulds and set for at least an hour.

Release from the moulds when ready to eat and enjoy!
